Organic Mexican Chiapas - Soconusco, MX
The Chiapas region of Mexico, bordering Guatemala in the rich fertile volcanic soils of the southern highlands, has long been associated with great coffees. The climate with its abundant rainfall, significant sunny days and an environment that allows for a coffee crop to be grown at least in part in a shade grown environment under a rainforest canopy contributes to its distinctive profile. It is indicative of those classic traditional Chiapas flavors but adds a few very subtle elements to showcase this special coffee as unique without losing it's luster as a distinguished example of the coffees of that region.
Aromas of fire roasted nuts and cocoa fresh off a great pour or brew yield to flavor notes of unsweetened chocolate, graham crackers and subtle nuttiness similar to roasted almonds and hazelnut.

Sumatra Mandheling (Grade 1) - Padang, Indonesia
Grown in nutrient dense soils on the slopes of an active volcano, this coffee is prized for a somewhat bold flavor profile. Mandheling varietal in Indonesia has a reputation as a very representative coffee of the region and this specific lot is graded as Grade 1, the top grade that can be achieved in a region. Processed using a wet hulled method prior to drying that is unique to the region (Giling Basah process) that hulls the beans from the coffee fruit much earlier in the process that creates a natural sweetness and is thought to reduce the acidity of the bean.
Roasted to a medium dark level, this coffee exhues rich, dark chocolate with an earthy undertone that has subtle notes of baking spices and brown sugar. Many rave of it's small "low-acidic" type flavors as a big positive.

Processing: Wet Hulled (Giling Basah), hulling after hot water soak. Unique to Indonesia.

Bluster Winter Blend
We, on occasion, find a blend that reminds us of noncoffee things, be that foods, special occasions, places. This one jumped out at us, reminding us of winter and gatherings of family and friends. This coffee reminds us of Ol' Saint Nick in its character of a round full body with flavors of walnuts, dark chocolate and molasses all tied up in a mild but bright citrus ribbon and bow. This is a wonderful preparation of beans for cooler to downright frigid weather, creating delicious early morning brews to warmup the effects of a morning nip, as an afternoon warmer and as an excellent pairing with rich seasonal desserts in front of a cozy fire. Its the perfect blend to share with friends and family this season and rumor has it it can even warm the hearts of grinches everywhere.
Roast: A blend of mostly medium with dark roasts.
Blend: High altitude South American, full body South Pacific and fruit forward Central American coffees.
