Grown in nutrient dense soils on the slopes of an active volcano, this coffee is prized for a somewhat bold flavor profile.  Mandheling varietal in Indonesia has a reputation as a very representative coffee of the region and this specific lot is graded as Grade 1, the top grade that can be achieved in a region.  Processed using a wet hulled method prior to drying that is unique to the region (Giling Basah process) that hulls the beans from the coffee fruit much earlier in the process that creates a natural sweetness and is thought to reduce the acidity of the bean. 

Our recent cupping of this shipment has the traditional Sumatran flavors of a dark chocolate richness and clean syrupy mouthfeel.  We also picked up on mild vanilla and a very short lasting clean acidic finish not unlike that of a nice dry red wine.  We roasted this to medium dark to bring out the exotic spice and brown sugar like flavors without imparting flavors not of the bean that can occur in darker roasts as part of the roasting process.
