Tarrazú La Pastora is a coffee developed by CoopeTarrazú, a well-recognized cooperative in San Marcos, Tarrazú, Costa Rica. CoopeTarrazú has more than 50 years of experience and tradition while working with more than 1,000 coffee producers from the surrounding communities in the Tarrazú region. The cooperative's main functions are to provide milling, marketing and export services to its Co-Op members.
We take this very balanced coffee with subdued acidity and mild sweetness with lush cocoa notes and age it in freshly emptied bourbon barrels, This batch spent about 6-7 weeks in Pinhook Straight Bourbon barrels, bringing forward those whiskey notes of caramel, vanilla and very mild cinnamon that really bloom with a even just a touch of cream or milk/milk substitute. Roasted to mid-medium, it keeps that bit of roastiness without covering the flavors the bourbon aging promotes.
