Nicaragua is known as the land of the lakes and volcanoes, which provides rich soil create by those elements for coffee trees to flourish. Nicaraguan Jinotega coffees have attracted attention from around the world for many years for their high grown characteristics (the highest grown coffees in Central America). The high grown situations of these coffees force the growers to delay their harvest, as the coffees develop nearly two months later than lower elevation coffees of the region due to colder mountain climates and increased daily cloud cover. This longer growing season and much slower maturation period of the crop allows for the development of beans with a decreased sharp acidity on the palate and more complex cupping notes. 

We source this bean from the farm of Don Francisco and his wife Blanca Nieve who live on the upper slopes of the mountains that surround the city of Jinotega in the north central region of Nicaragua. They produce exceptional quality coffee and leave a significant part of their farms in their natural forest state to protect the natural spring waters that bubble to the surface.

In the cup, first encounters of an aroma brings forth roasted almond and walnut essence with a woodiness that transition to a mild and pleasant floral scent. First sip creates notes of orange zest combining with those same round nutty notes with a finish of tart berries and a lingering vim of a savory dry white wine.
